Pollinator Paradise Summer Slaw with Turnips

3-5 white turnips

4 red turnips

3 medium carrots

6-8 turnip and/or pak choy leaves

1 small can Mandarin oranges  (reserve syrup)

3 oz slivered almonds
1/4 cup raisens


Oriental Dressing

¼ cup rice vinegar

2 Tbsp Mandarin orange syrup

2 tsp tamari or soy sauce

2 tsp toasted sesame oil

 

Peel carrots; cut off stems and rough spots on turnips. Grate carrots and turnips. Cut leaves into roughly 1” squares. Mix carrots, turnips, greens, orange segments, raisins and almonds.  Mix dressing ingredients; pour over salad and let stand in refrigerator for 30 minutes (or overnight).
